| A rich vegetable curry is a satisfyingly tasty option for an elimination diet |
Many curry bases start with onion and garlic, which is often excluded from an elimination plan. This recipe is adapted to a base of allowed vegetables: carrot, zucchini, parsnip and lentils sautéed in Indian spice mix garam masala (making sure the mix contains no onion or garlic powder) and then slow cooked in coconut milk.
The curry takes about the same time to cook as nutty brown rice - so pop that in your rice cooker at the start for the perfect accompaniment.
