This simple curry is delicious and satisfying. It can be served with rice or enjoyed on its own like a stew.
To make this I heated a pan with a little vegetable oil and toasted 2 tablespoons of garam masala, a pinch of chilli and a couple of teaspoons of ground coriander. Garam masala is a blend of spices including cumin, cardamom and cinnamon. It can contain garlic so if you're eliminating garlic make sure you check.
A minute of toasting will bring out the full flavour of the spices. Now add the dried yellow split peas, boiling water. Half a cup of peas will provide a hearty meal for one. Add three times the volume of water - so one and a half cups per person.
The yellow split peas take 25 minutes to cook. Add salt to taste toward the end of cooking - about two teaspoons.
Garnish with coriander leaves.
