Ideas for good elimination diet vegetables
- Carrots
- Parsnips
- Brussel sprouts
- Zucchini
- Butternut squash
- Buttercup pumpkin
- Portobello mushrooms
- Beetroot
- Yellow potatoes (if you aren't eliminating nightshades)
- Sweet potato
Cooking time can be up to an hour for harder vegetables, so leave plenty of time.
Preheat your oven to 160C.
Wash and cut the vegetables into rustic chunks.
Toss with olive oil and salt. You can also include herbs and spices here to add interest.
Spread the vegetables well on a large baking sheet or two.
Turn the vegetables using a fish slice from time to time during cooking.
